I did a really fun project two summers ago, called ‘Real life dinners’ in which I just snapped a photo of what was on my dinner plate and shared the recipe or quick fix on my personal blog. I got so much excited feedback about showing what we ate for a week. I think it cracked my man up like crazy. But I get it. I always want to see what people really eat for dinner- not something all pretty and staged, but what really goes on a table, no company, no special occasions, no fancy dishes and napkins… just dinner. I would say as a disclaimer, that our standard menu does tend to change with the season, (I’m sure everyone does… you know, soups in the winter, lighter foods in the summer, etc.) but this is pretty standard for us around this time of year and I didn’t make any special meals within this week to impress anyone. That said… here was our very favorite dish that we actually tweaked two different ways, for two nights of meals.
Possibly my all time favorite chicken. Honey Mustard chicken. Guys… this is one to tuck into your EASY arsenal. (I also make this for company quite often.)
Honey Mustard Chicken
In a bowl, pour 1/2 cup honey, 1/4 c olive oil (or you can do melted butter- honestly it tastes the same to me but olive oil is much better for you) 3 TBSP Dijon mustard, 1 tsp curry powder, salt, and cracked pepper. You can marinate chicken pieces, or breasts in this, and bake it at 350 for half hour… or you can skewer tenders like we did and use it as a basting BBQ sauce. (That’s my favorite way to use it.)
It takes five minutes to mix and I always have the ingredients on hand. Then I snipped some fresh sage and oregano and sauteed a couple of zucchinis and mushrooms in some olive oil. It was perfect and we ate outside in the sunshine.
Leftover honey mustard chicken, chopped up on top of a bed of spinach (my family’s favorite) with walnuts, pear slices, tomatoes and avocados (the hoodlums always pass on the avocado and tomato just so you know) with some leftover vinaigrette drizzled over the top. The comments I got at dinner were, ‘Mom, you always make the best salads’ and from my man, ‘I love how packed full of things your salads are.’ Yes… well… I like to make every bite a surprise. (grin)
