Summer is still lingering in the air but I am ready for soup weather. I made my first batch of the season and it’s too good not to share. It had the perfect amount of spiciness but not too much that my kids complained. It’s vegetarian with beans as protein which is perfect since my daughter is a vegetarian. But you could easily add chicken or shrimp into it as well.
I made a double batch so I could freeze half of it. I love having dinner on hand for those weeks I am lacking on the meal planning.
Ingredients you’ll need for a single batch
- White onion- 1. You’ll dice it so I buy the pre-diced to save me time and onion tears
- Franks Red Hot Sauce or Buffalo sauce-1/2 cup. I used slightly less so it wasn’t too spicy for my kids
- Jalapeno-1. I cut the seeds out. Keep them in if you want it to have more spice.
- Garlic- 3 cloves. I use the minced jarred king to save time and it works great.
- Diced green chilis- 1 can
- Fire roasted diced tomatoes- 2 cans lightly drained
- Great northern beans- 2 cans rinsed and drained
- Pinto beans- 1 can rinsed and drained
- Butter – 2 TBSP. I let mine sit out to soften.
- Vegetable broth- 3-4 cups
- Cream cheese- 3 TBSP. Softened.
- Chili Powder- I leave this out when my kids are going to eat it
- Paprika
- Cumin
- Olive Oil. Just for the bottom of the pot.
- Salt and pepper
- Toppings of your choice like sour cream or cilantro
Instructions:
Heat a large pot on medium and add olive oil to the bottom
Add in onion
After a few minutes, add in jalapeno
Add in garlic
Add in diced green chilis
Add in fire roasted diced tomatoes
Mix and add in a pinch or two of salt and pepper
Add a sprinkle of chili powder (or leave it out)
Add a dash of paprika and cumin
Stir in great northern beans
Stir in pinto beans
Add in Franks red hot sauce or other buffalo style sauce
Add in butter
Stir in vegetable broth (3-4 cups depending on how thick you want it).
Let simmer for 20 minutes with the lid on the pot
Optional but recommended- take an immersion blender or use a regular blender to mix and thicken it up. Just slightly.
Add in softened cream cheese
Allow cream cheese to melt and stir together.
Top with sour cream, cilantro, anything your heart desires!
We paired this with grilled cheese on sourdough bread.
