It’s happening.
Zucchini is coming out of my garden by the bushel. (A reminder: AllMomDoes.com has lots of wonderful zucchini recipes for you. Just do a search for “zucchini”).
It’s always a struggle to use it all up. I keep offering some to friends and family but in the busyness of a new school year, people are too tired to cook or bake with it. Since I have time, I decided to bake and give the baked goods away.
My family loves zucchini bread, but here’s the problem: zucchini bread recipes are loaded with oil and sugar! One recipe I found had a cup of oil and TWO cups of sugar! Undaunted, I kept researching until I found a healthier recipe. I tweaked it a bit (as I always do) and came up with this yummy and WAY healthier recipe.
Give it a try and I’ll bet even your pickiest eaters will love it.
Healthier Zucchini Bread
Ingredients:
- 1 cup flour
- ½ cup whole wheat flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon cinnamon
- 1/3 cup melted coconut oil
- ½ cup raw honey (or agave)
- 1 egg
- ½ cup Greek yogurt
- 1 ½ teaspoons vanilla extract
- 1 cup shredded zucchini (patted dry)
- ¾ cup add-ins: nuts, raisins, or chocolate chips, etc.
Instructions:
Preheat the oven to 350 degrees. Grease a 9 x 5” loaf pan.
In a large bowl, whisk together the flours, baking powder, baking soda, salt and cinnamon. Please note that you can use all regular flour if you don’t have any whole wheat flour. Set aside.
In a medium bowl, mix together the oil, honey, egg, yogurt and vanilla. (Any oil can be substituted for the coconut oil). Add the wet ingredients to the dry. Stir just until combined.
Gently fold in the shredded zucchini and whatever add-ins you are using (I combined nuts and blueberries to make ¾ cup).
Spread the batter into the pan and bake for 40-50 minutes or until the center is done. Tent with foil if your bread browns too fast.
Want muffins instead? Place the dough in muffin pan and bake for 13-14 minutes.
I will definitely be saving this recipe and using it over and over again (with different add-ins). As my grandson says, “Even when Nana puts weird stuff in her baking, it is delicious!” High praise indeed. Zucchini bread or muffins are a great way to sneak a bit of veggies into a meal (without the obligatory two cups of sugar!).
