Who said eating fruits and veggies has to be boring? Take your children’s snacks to the next level with these super fun and creative “veggie trains”. Your children will enjoy helping you create these snacks that are not only fun to look at but also healthy and delicious to munch on. I bet they will ask to create these snacks with you again and again. It’s a win for creative bonding time with your children and a definite win for adding healthy fruits and veggies to their diet.
Older children can carefully help with the actual cutting of the veggies while younger children help arrange the fruits and veggies in the ‘train”
What you need:
- Cucumbers
- Sweet bell peppers of all colors
- Grapes
- Cherry Tomatoes
- Carrots
- Toothpicks (the wooden ones)
The exact amount of these ingredients depends on how many children you have or how long you would like your veggie train to be.

Directions:
Wash and dry the fruits and vegetables
Slice the top off the sweet bell peppers lengthwise. Do not discard of the tops you have cut off but slice them up and set aside to put into the carriages.
Slice up the cucumbers into thick rounds for the wheels
Chop up the carrots into carrot sticks

Now you are ready to assemble your veggie train.
Using the toothpicks, carefully connect the cucumber wheels to the sweet bell pepper carriages.
Next, arrange the carriages in a row on a large wooden board to form a train.
For the lead carriage, use toothpicks to stick a thick slice of cucumber topped with cherry tomatoes arranged as smoke onto a whole pepper.

The last step is to add your various fruits and vegetables, grapes, bell pepper slices, carrot sticks, cherry tomatoes into the carriages for a finishing touch.
If your children enjoy dip or humus, you can add this to one of the carriages as well.
Our children really enjoyed making this veggie train with me. They found the colors and shapes of the train very attractive and fun.
Our daughter was excited to dig in and enjoy her gourmet fruit and veggie train, she is such a food connoisseur. Our son mostly wanted to play with and ride the train, go figure! He however also could not resist eating the beautifully and attractively displayed fruits and veggie.
