The saying that goes: “necessity is the mother of invention” rings true as I share today’s recipe with you.
This recipe is an absolute must! It is a simple two ingredient recipe that is not only nutritious but also packed with delicious flavor. Lentils offer numerous health benefits. They are high in protein, rich in dietary fibre and packed with essential vitamins and minerals.
I usually make an onion and tomato stew base for my lentils. This was not possible today however, because I had run out of both onions and crushed tomato. As lunch was fast approaching, bringing with it famished children, I opened my pantry drawer in search of a solution to my predicament and a can of coconut cream looked back at me. It called out my name; and who was I to ignore this beautiful can, so timely in its appearance. Eureka! Coconut cream lentils it is! I’ve successfully used coconut cream while preparing bean stew and it was delicious. Thus, I was confident it would be delicious with lentils as well as I went about creating a new recipe for the archives. I chose to pair the coconut cream with dried parsley flakes, and the result was an absolutely mouthwatering and delicious meal that had my children not just asking for seconds but also requesting for the exact same meal the next day!
I chose to serve my coconut cream lentils with a side of homemade garlic bread. Yes! The bread itself was homemade. Find the recipe for that here.

Making garlic bread is simple enough. Simply slice your bread, mince a clove of garlic with a handheld garlic mincer straight onto the slice. Then spread room temperate butter over that. Toast (I used an oven) until slightly brown and there you have it; delicious and aromatic homemade garlic bread that will leave your kitchen smelling heavenly.
Now for the entire recipe:
Ingredients
- 1 can of coconut cream (shake before opening)
- 1½ cups dry red lentils
- 3 tablespoons dried parsley flakes
- 4 cups water
Instructions
- Add the lentils to a saucepan with the coconut milk, parsley flakes and water; stir to combine.
- While stirring occasionally to ensure even cooking, bring to a boil over high heat, then reduce the heat to medium-low and simmer for 18-20 minutes, or until the lentils are tender.
- Serve warm with rice or garlic bread and enjoy!
