One of the coziest additions to a Christmas morning with family is a delicious and festive quick bread to enjoy with your coffee. This Cranberry Orange bread isn’t overly sweet and is so refreshing paired with a rich quiche or breakfast casserole. It makes the house smell warm and inviting and is simple to throw together!
I usually try to make my Christmas morning recipes a day or two in advance to keep things from getting too chaotic. These loaves also make wonderful gifts if you’re aiming for some homemade treats this Christmas.
What you’ll need:
- 1 ½ cups Bob’s Red Mill Gluten-Free Flour
- ½ tsp baking soda
- 1 tsp baking powder
- ¼ tsp salt
- Zest from 1 orange
- 6 tablespoons melted butter
- 2/3 cup sugar
- 2 eggs
- ½ cup orange juice
- 1 ¼ cups fresh cranberries, divided
Directions:
Preheat oven to 350 degrees and grease a 9×5 loaf pan.
In a small bowl, whisk the flour, salt, baking powder, baking soda, and orange zest.
In a large bowl, mix the butter and sugar until smooth. Add the eggs and orange juice.
Fold in 1 cup of the cranberries.
Sprinkle the remaining ¼ cup cranberries on top of the batter.

Bake for 45 minutes or until a toothpick comes out clean. Allow to cool for 10-20 minutes before turning the bread out onto a cooling rack.

Tips:
- If you’re baking ahead of time, place in an airtight container and refrigerate. Best served warm!
- For extra sweetness, drizzle a glaze over the top once you’ve removed the bread from the pan. (1 cup powdered sugar, splash of vanilla extract, and 2-3 tbsp milk mixed well in a small bowl until you reach the desired consistency!)
