When I find a meal I like, I tend to become obsessed with it and make it often. Especially when it is something I can prep ahead of time. I am in the office five days a week and try to bring food versus buy.
These protein banana pancakes are a current obsession of mine. They are packed with about 29 grams of protein. I make them ahead and can quickly heat them up at work.
Here’s what you need:
- 1 egg
- 1 scoop of protein powder (I prefer vanilla or blueberry)
- 1 banana (better if it’s ripe for easier mashing)
- Optional- walnuts, peanut butter, any pancake type toppings
Here is all you do:
In a bowl, mash up a banana
Crack the egg and add to the bowl
Stir in your protein powder
Cook on the stove as you would a normal pancake. It will be a little more runny than the consistency of a normal pancake but will cook up just fine.
Top with any of your favorite pancake toppings
