Spring has sprung!
Spring is such a happy time, isn’t it? Bright colors surround us. Flowers are bursting forth in every color imaginable, the sky is bluer, and the greens are brighter. It’s like we’re living in a rainbow!
Spring represents new life and spring (or springs of life) are mentioned in the Bible from Genesis to John. Jesus gives us new life and that is a great reason to celebrate all year long, but especially in spring.
I’ve been heading outside in my bare feet to enjoy the feel of the soft grass under my feet. I’ve been digging in the dirt without gloves. These things allow me to really feel the moist earth and the new grass and celebrate new life through Christ.
I’m not usually an outside person. I prefer inside activities like embroidery, reading, and baking. But somehow in the spring I find myself outside.
It always feels like spring sneaks in, doesn’t it? One minute it’s winter and seemingly overnight everything changes and the colors explode around us. Even though we know it’s coming, it always feels like a wonderful surprise.
I’m the type of person who wants to celebrate everything. I don’t care how obscure the reason is, it’s good enough for a party. My siblings used to say, “Oh, did someone sneeze? Ann is having another party.”
So, spring arriving is a great reason for a celebration. When I saw these cookies, I knew they would be perfect. I enlisted my grandkids to help me make them and they were fun and easy to make.
FLOWER COOKIES
Ingredients:
- 1 cup soft butter (2 cubes)
- 2/3 cup sugar
- 1 large egg
- 1 teaspoon almond extract
- 2 2/3 cups flour
- ¾ teaspoon salt
- Jam or jelly – softened for 9 seconds in the microwave
Directions:
Preheat the oven to 375 degrees.
Cream the butter and sugar together until light and fluffy.
Add the egg and almond extract and mix for 1 minute.
Whisk the flour and salt together in a small bowl and add to the wet mixture. Mix just until it is incorporated.
Roll the dough into balls and place them on a parchment lined cookie sheet.

Flatten the dough a bit with the bottom of a glass. You can spray the bottom of the glass with cooking spray so it doesn’t stick, or I used the back of a silicone pancake turner to press mine.

Have your kids make five fingerprints in the shape of flower petals on the cookies (pinkies work best).

Add jam to each indentation (don’t over-fill). You could use a ¼ teaspoon measuring spoon and push some jam out with a skewer or I used a child’s medicine dropper (clean, of course) and dripped the jam in.

Roll a tiny ball of dough and use it for the flower’s center.
Chill the cookie sheet for 10-20 minutes before baking.
Bake in your preheated oven for about 12 minutes or until the edges just start to brown. Cool for 5-10 minutes before removing from the pan.
Voila! Spring Flower Cookies!
My entire batch of cookies disappeared the same day. My husband and grandkids loved them!
However you choose to celebrate spring, take a moment to step outside and take in the new life that surrounds you. It will brighten your whole day.
