Springtime is showing up right on schedule with its beautiful blooms and blustery weather. Most of us are excited about the change of season and can’t wait to get moving on backyard projects or cheer on our kids at their baseball and soccer games. The flood of new sports schedules can be a lot to juggle and us moms must again reach into our arsenal of time management skills to keep everything chugging along. Getting a healthy dinner ready amid evening practices can feel really out of reach, especially mixed in with school and work schedules! One of the things that helps me immensely when it comes to balancing family meals with hectic schedules, is planning out at least a few realistic beef recipes for the week based off what we have going on each day.

For example, if I know we’re going to be at a track meet or t-ball practice, I try to find a convenient meal I can prep ahead of time. Sometimes that means getting a few things ready the night before or throwing together a crockpot meal that will be waiting for us when we get home late. I also find it helpful to double up on a recipe or two for the week so I know that the leftovers will take care of dinner the next day.
A great make-ahead option for a busy spring sports season, are these tasty beef potluck rolls! They’re convenient, satisfying, and they make a good amount of food for your hungry crew. Knowing you’ll have these delicious, savory rolls to come home to will be such a relief after a long day. They can be thrown together the night before and only need to bake for twenty minutes once you pull them out of the fridge, so by the time you’ve gotten everyone’s cleats off and tossed the muddy uniforms into the washer your kitchen will smell amazing, and dinner will be served!
An added bonus is that the beef in these rolls contains protein, which can help build and maintain muscle. It’s also full of essential nutrients and helps you feel satisfied for longer, which is perfect for active, growing kids and busy parents alike! Easy Roast Beef Potluck Rolls
Ingredients:
- 1 lb. thinly sliced reduced-sodium deli roast beef
- 1 package (12 ounces) Hawaiian rolls
- 1/4 cup cream-style prepared horseradish
- 6 slices reduced-fat provolone or Havarti cheese
- 1/3 cup butter, melted
- 2 tablespoons Worcestershire sauce
- 1 tablespoon dried parsley leaves
- 2 teaspoons packed light brown sugar
- 1/4 teaspoon onion powder
Cooking:
- Coat 9 x 13-inch baking dish with cooking spray. Cut rolls in half, horizontally. Place bottom halves of rolls in prepared baking dish; spread horseradish on cut side. Top with Deli Roast Beef, cheese and top halves of rolls.
Cook’s Tip: You may substitute Dijon mustard for prepared horseradish.
- Combine butter, Worcestershire sauce, parsley, sugar and onion powder in small bowl; mix to combine. Pour mixture evenly over sandwiches. Cover and refrigerate for 1 hour to overnight.
- Preheat oven to 350°F. Bake, uncovered, 15 to 20 minutes or until cheese is melted and rolls are golden brown.
Tip: Mustard or Dijon mustard can be used in place of the horseradish.
