Birthday season means baking season for me. I love and enjoy baking our children’s birthday cakes and cupcakes from scratch and decorating them with their favorite colors and stuffing them with surprise treats like crumbled Oreo cookies or strawberries.
Today I’m happy to share my easy-to-execute basic cake recipe I use for their cakes and cupcakes. Make it your own by adding flavorings of your own, like dried coconut flakes or melted chocolate, and adding layer fillings like sliced strawberries, chopped Oreo cookies, or blueberry compote.
I make my batter by hand so the instructions will be as such.
Cake Recipe
What you need:
- 3 cups self rising flour
- ¾ cup granulated sugar
- 1 cup butter or margarine (2 sticks), room temperature
- 1 cup water or milk
- 2 teaspoons baking powder
- 2 teaspoons vanilla
- 4 medium eggs
- 2 9-inch baking pans
- Spatula
Directions
- Preheat your oven to 350°F.
- Grease the baking pans with some butter, then lightly dust with flour and set aside.
- Add the room temperature, softened butter or margarine and sugar to a large mixing bowl.
- Cream the mixture with a spatula until fluffy.
- Add the eggs and mix well.
- Add the water and baking powder
- Add the flour, sifted, one cup at a time and mix into a uniform dough.
- Next, add the vanilla and mix.
- At this stage, add any flavorings of your choice like dried coconut flakes.
- Divide the batter between the baking pans and bake at 350°F for 25 to 30 minutes or until a toothpick inserted into the middle comes out clean.
- Cool the cakes, then assemble and frost with buttercream.

Buttercream Recipe
What you need:
- 1 cup butter (2 sticks), softened
- 3 cups icing (powdered) sugar, sifted
- 1 tsp vanilla
- 3-5 drops food color, depending on intensity desired
Directions
- Cream butter with an electric mixer (stand or handheld) until it changes color from yellow to white.
- Add the icing sugar and mix until fluffy, starting at the lowest setting and gradually increasing to the max.
- Add the vanilla and food color and mix.
- Assemble and frost you cooled cakes with the buttercream.
