Today I’m excited to share with you a family favorite. I make this recipe at least once a week and my family’s totally unbiased opinion is that Mummy’s homemade pancakes taste better than those at the restaurant!
I hope your family enjoys these thick, fluffy and delicious pancakes as much as mine does. If they are old enough, and with supervision, the children will enjoy helping to mix ingredients, carefully pour the batter onto a pan or practice their pancake flipping skills.
Cooking from scratch means you know and control what is in your food and trust me, it will definitely taste better than the boxed stuff. The good news is that with this recipe, you will most likely already have all the needed ingredients in your kitchen or pantry.
Ingredients:
- 2 eggs
- 2 ½ cups milk (or water)
- 2 teaspoons baking powder
- 5 tablespoons butter, melted
- I teaspoon vanilla extract
- 3 cups self-rising flour
Instructions:
- Melt the butter on a pan and set aside.
- Sift and mix the dry ingredients; flour and baking powder in a large mixing bowl.
- Beat the eggs and add the water or milk (whichever you prefer) to them.
- Make a well in the centre of the dry ingredients and add the water/milk and egg mixture, stirring till well incorporated.
- Finally, add the melted butter and vanilla and mix well into your pancake batter.
- Heat a pan over medium-high heat. Add a dollop of butter and then pour or scoop the batter onto the pan, using approximately 1/2 cup for each pancake; cook until bubbles form and the edges are dry, about 2 to 3 minutes.
- Add another small dollop of butter on the top of the pancake before flipping and cooking until browned on the other side as well.
- Repeat steps 6 and 7 with the remaining batter.
- Serve and enjoy!

For a savory twist, I like to top mine with bacon and a sunny side up egg.
Our son prefers to top his pancakes with chocolate. He loves to add a square of milk chocolate to his hot, fresh of the fire pancake and watch it melt into a delicious spread.
